250 g (9 oz) halloumi cheese, cut into 1-inch cubes
1 medium zucchini, cut into thick rounds (optional, for variety)
1 red bell pepper, cut into 1-inch pieces
1 red onion, cut into chunks
2 lemons (1 for zest & juice, 1 sliced into wedges for serving)
2 tbsp olive oil
2–3 sprigs fresh thyme (or 1 tsp dried thyme)
1 tsp honey (optional, for balance)
Salt and freshly ground black pepper, to taste

Instructions
1. Prepare the skewers
If using wooden skewers, soak them in water for 20 minutes to prevent burning.
Cut the halloumi into even cubes. Pat dry with a paper towel to remove excess moisture.
2. Make the marinade
In a small bowl, whisk together olive oil, juice and zest of 1 lemon, thyme leaves, honey (if using), salt, and black pepper.
3. Assemble the skewers
Thread halloumi, zucchini, bell pepper, and onion onto skewers, alternating for color.
Brush generously with the marinade on all sides.
4. Grill the skewers
Preheat a grill pan or outdoor grill to medium-high heat.
Cook skewers for 8–10 minutes, turning occasionally, until halloumi is golden with grill marks and vegetables are tender.
Brush with extra marinade while grilling for more flavor.
5. Serve
Transfer to a platter, drizzle with any leftover marinade, and serve with lemon wedges on the side.
