Mediterranean Halloumi & Bean Bake

Ingredients (serves 3–4)

250g halloumi cheese, sliced

1 tbsp olive oil

1 onion, finely chopped

2 garlic cloves, minced

1 red pepper, diced

1 courgette (zucchini), diced

1 can (400g) chopped tomatoes

1can (400g) mixed beans (or cannellini/kidney beans), drained and rinsed

1 tsp smoked paprika

1 tsp dried oregano

½ tsp chili flakes (optional)

Salt & black pepper, to taste

Fresh parsley or basil, for garnish

Method

1. Preheat oven to 200°C (180°C fan) / 400°F.

2. Heat olive oil in a large ovenproof pan. Sauté onion for 5 minutes until soft, then add garlic, pepper, and courgette. Cook for another 5 minutes.

3. Stir in tomatoes, beans, paprika, oregano, and chili flakes. Season with salt and pepper. Simmer for 10 minutes until thickened

4. Place halloumi slices on top of the mixture. Transfer to the oven and bake for 15–20 minutes until the halloumi is go

5. Garnish with parsley or basil. Serve with warm crusty bread, couscous, or a fresh green salad.
