🛒 Ingredients
2½ cups flour (all-purpose or 50% whole wheat)
1 tsp salt
½ tsp instant dry yeast
¾ cup warm water
2 tbsp extra-virgin olive oil
½ cup pitted olives (Kalamata or green), chopped
1 tsp dried oregano or rosemary
Optional: 1 tbsp seeds (sesame or flax)

1️⃣ Mix
1. In a large bowl, combine flour, salt, yeast, and herbs.
2. Add water and olive oil; stir with a spoon until a sticky dough forms.
3. Fold in olives.

Cover bowl with plastic wrap or lid.
Let rest at room temperature for 12–18 hours until bubbly and doubled.
3️⃣ Shape
1. Lightly flour your hands and surface.
2. Gently shape dough into a round (do not knead).
3. Rest 30 minutes.
4️⃣ Bake
1. Preheat oven to 230°C / 450°F with a covered Dutch oven inside.
2. Transfer dough to hot pot, cover, and bake 30 minutes.
3. Uncover and bake 10–12 minutes until golden.
