These Mediterranean chicken patties are inspired by Greek & Levantine flavors—fresh herbs, garlic, lemon, and a touch of yogurt for moisture. Chicken Mixture

500 g chicken mince (breast preferred)

3 tbsp low-fat Greek yogurt

1 small onion, very finely chopped

3 cloves garlic, minced

2 tbsp fresh parsley, chopped

1 tbsp fresh mint or dill, chopped

Zest of 1 lemon

1 tbsp lemon juice

½ tsp salt

½ tsp black pepper

1 tsp dried oregano

½ tsp ground cumin (very mild, not spicy)

Binding (Oil-Free)

2 tbsp oat flour OR breadcrumbs

1 tbsp water (if mixture feels dry)

1. In a large bowl, add chicken mince.

2. Add yogurt, onion, garlic, herbs, lemon zest & juice.

3. Sprinkle salt, pepper, oregano, and cumin.

4. Add oat flour/breadcrumbs.

5. Mix gently until just combined (don’t overmix).

6. Rest mixture 10 minutes (helps patties hold shape).

7. Shape into 6 medium patties.

8. Heat a non-stick pan on medium heat.

9. Place patties directly on pan (no oil).

10. Cook 5–6 minutes per side until golden and cooked through.

11. If pan dries, sprinkle 1–2 tbsp water around patties and cover briefly.
