Mediterranean Lemon Herb Chicken Recipe
This recipe is inspired by the traditional cuisine of the Mediterranean region, where fresh herbs, citrus, and olive oil come together to create a truly unforgettable culinary experience. INGREDIENTS:(Servings: 4-6)
1 pound baby potatoes, halved
4 tablespoons plus 1/3 cup extra virgin olive oil
Kosher salt and black pepper, to taste
2 lemons (1 halved, 1 sliced)
6 chicken thighs or breasts
2 tablespoons dried oregano
1 tablespoon smoked paprika
1 shallot, chopped
Red pepper flakes, to taste
6-8 garlic cloves, lightly smashed
2 cups mixed fresh parsley, oregano, and dill, chopped
1 medium yellow onion, sliced
6-8 ounces feta cheese, cubed
4 tablespoons salted butter, sliced into 6 pieces
2 tablespoons red wine vinegar
1-2 pepperoncini, chopped
3/4 cup Greek olive mix or green olives, torn
INSTRUCTIONS:
Preheat your oven to 425°F (220°C).
On a large baking sheet, toss the halved baby potatoes with 2 tablespoons of olive oil. Season with kosher salt and black pepper. Add the halved lemons to the pan.
Roast in the oven for about 20 minutes, or until the potatoes are tender.
In a mixing bowl, combine the chicken pieces with the remaining 2 tablespoons of olive oil, dried oregano, smoked paprika, chopped shallot, salt, pepper, and red pepper flakes.
Once the potatoes are done roasting, remove them from the oven and nestle the seasoned chicken among them.
Scatter the sliced onions, smashed garlic, and lemon slices around the chicken. Top each chicken piece with a slice of salted butter.
Return the baking sheet to the oven and cook for an additional 20-25 minutes, or until the chicken is fully cooked through.
For the dressing, whisk together the remaining 1/3 cup of olive oil, red wine vinegar, chopped fresh herbs, pepperoncinis, and torn olives.
Finely chop the reserved lemon slices, discarding any seeds, and mash the garlic into a paste. Add both to the dressing mixture. Season with additional red pepper and salt to taste.
Once the chicken and potatoes are cooked, pour the prepared dressing over the dish, crumble the feta cheese on top, and finish with a garnish of fresh herbs.
