2 garlic cloves, grated

1 tsp dried oregano

1 tbsp chopped fresh parsley or mint

Salt & pepper to taste

For the Blistered Grapes:

1 cup seedless red grapes

½ tsp olive oil

Pinch of salt & thyme (optional)

For the Couscous Salad:

1 cup cooked couscous (or quinoa, or bulgur)

¼ cup crumbled goat cheese or feta

2 tbsp toasted pine nuts or slivered almonds

2 tbsp chopped cucumber

Handful arugula or baby spinach

Optional: thinly sliced shallots or red onion

2 tbsp olive oil

1 tbsp lemon juice

½ tsp honey

1 tbsp chopped fresh mint

Salt & pepper to taste

Toss grapes in oil and roast in a hot oven (400°F / 200°C) or pan-sear for 5–8 minutes until softened and slightly blistered.

3. Cook the Chicken:

Grill or pan-sear chicken for 5–6 mins per side until golden and cooked through. Let rest, then slice.

4. Prepare Couscous Salad:

In a bowl, combine couscous, goat cheese, cucumbers, arugula, and toasted nuts. Drizzle with dressing and toss gently.

5. Assemble the Bowl:

Spoon couscous salad onto plates or bowls. Top with sliced chicken, blistered grapes, extra cheese/nuts, and herbs.
