Notes & Tips
Best Potatoes: Yukon Gold potatoes create a naturally creamy texture, while russet potatoes are fluffier.
Make it Vegan: Use almond or oat milk instead of regular milk and swap feta for dairy-free cheese or nutritional yeast.
For Extra Creaminess: Blend with a hand mixer or food processor for a silkier texture.
Storage & Reheating: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of milk to restore creaminess.
