A wholesome Mediterranean soup loaded with colorful vegetables, creamy beans, olive oil, and gentle herbs. Simple, nourishing, and deeply comforting—just like a traditional home-style Greek/Italian soup.

🧺 Ingredients

3 tablespoons extra-virgin olive oil

1 onion, finely chopped

2 garlic cloves, minced

1 carrot, diced

1 celery stalk, diced

1 potato, peeled & diced

1 zucchini, diced

½ cup green beans, chopped

1 teaspoon dried oregano

½ teaspoon dried thyme

Salt & black pepper, to taste

1 tablespoon tomato paste

1 can (400 g) cannellini or butter beans, drained & rinsed

1 can (400 g) chickpeas, drained & rinsed

6 cups vegetable broth

Juice of ½ lemon

2 tablespoons fresh parsley or dill, chopped

👩‍🍳 Instructions

1️⃣ Build the Base

Heat olive oil in a large pot over medium heat.

Add onion and cook 4–5 minutes until soft.

Add garlic, carrot, celery, and potato; cook 3 minutes.

2️⃣ Add Vegetables & Flavor

Stir in zucchini and green beans.

Add oregano, thyme, salt, pepper, and tomato paste. Cook 1 minute.

3️⃣ Simmer the Soup

Add beans and broth.

Bring to a boil, then reduce heat and simmer 25 minutes until vegetables are tender.

4️⃣ Finish Mediterranean-Style

Turn off heat. Add lemon juice and fresh herbs.

Taste and adjust seasoning.

🍽️ To Serve

Drizzle extra olive oil on top

Serve with warm pita or crusty bread
