🛒 Ingredients

Lentil Base

1 cup cooked brown/green lentils

1 tbsp olive oil

1 tsp lemon zest

Salt & black pepper

Roasted Veg

1 zucchini, sliced

1 red bell pepper, sliced

1 small red onion

2 tbsp olive oil

½ tsp dried oregano

Add-ins

¼ cup Kalamata or green olives, sliced

2 tbsp fresh parsley or dill

Herbed Yogurt

¾ cup Greek yogurt

1 tbsp lemon juice

1 tsp olive oil

1 tbsp chopped parsley/dill

Salt to taste

👩‍🍳 Instructions

1️⃣ Roast Veg

Oven 220°C

Toss veg with olive oil, oregano, salt

Roast 25–30 min till golden

2️⃣ Season Lentils

Warm lentils with olive oil, lemon zest, salt & pepper

3️⃣ Yogurt Sauce

Mix all yogurt ingredients till smooth

4️⃣ Assemble Bowl

Lentils base

Roasted veg on top

Olives + herbs

Yogurt drizzle

Olive oil final touch
