1 small onion, finely sliced

Creamy Sauce
¾ cup Greek yogurt
½ cup milk (or light cream)
½ cup shredded mozzarella or gouda
¼ cup grated Parmesan
½ tsp dried oregano
½ tsp dried thyme
Optional Add-Ins
½ cup sauteed mushrooms
½ cup spinach (wilted)
¼ cup olives, sliced
Fresh parsley or thyme for garnish
Instructions
Preheat Oven
Preheat oven to 190°C (375°F).
Lightly grease a baking dish.
Prepare Potatoes
Layer half of the sliced potatoes in the dish.
Season lightly with salt and pepper.
Sauté Aromatics
Heat olive oil in a pan.
Saute onion for 3–4 minutes until soft.
Add garlic and cook 30 seconds.
Spread over potatoes.
Make the Creamy Sauce
Whisk yogurt, milk, mozzarella, Parmesan, oregano, thyme, salt, and pepper.
Assemble
Add remaining potatoes.
Pour sauce evenly over the top.
Press gently so potatoes are coated.
Bake
Cover with foil and bake 30 minutes.
Uncover and bake 15–20 minutes until golden and bubbly.
Rest & Serve
Let rest 10 minutes.
Garnish with fresh herbs and serve warm.
