Ingredients

4 medium flour tortillas

1 cup baby spinach, roughly chopped

½ cup mozzarella cheese, shredded

½ cup crumbled feta cheese

¼ small red onion, thinly sliced

1 tbsp olive oil

Pinch of dried oregano

Freshly ground black pepper, to taste

Optional Add-ins

Sun-dried tomatoes, sliced olives, or roasted red peppers for extra flavor

A sprinkle of fresh parsley or basil before serving

Instructions

Prepare Filling:

In a bowl, mix spinach, mozzarella, feta, and red onion. Add a pinch of oregano and black pepper.

Assemble Quesadillas:

Lay 2 tortillas on a board. Spread filling evenly over each, leaving a small border.

Top with remaining tortillas to form sandwiches.

Cook:

Heat olive oil or butter in a skillet over medium heat.

Cook each quesadilla for 2–3 minutes per side, pressing gently, until tortillas are golden and cheese is melted.

Slice & Serve:
