Ingredients
For the Bread Bowl:
1 large sourdough or rustic bread loaf (top cut off, hollowed out)
For the Shrimp:
- 1 lb medium shrimp, peeled and deveined
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- Juice of 1 lemon
- Salt and pepper to taste
For the Creamy Filling:
- 1 cup plain Greek yogurt
- ½ cup crumbled feta cheese
- ½ cup grated Parmesan cheese
- ¼ cup low-fat cream cheese
- 1 tbsp olive oilv
- 1 tsp dried oregano
- 1 tsp dill (optional)
- Zest of 1 lemon
For Garnish:
- Fresh parsley, chopped
- Lemon wedges
Instructions
Prepare the Shrimp:
- Heat olive oil in a skillet over medium heat.
- Toss the shrimp with garlic, paprika, lemon juice, salt, and pepper.
- Cook for 2-3 minutes on each side until pink. Set aside.
Prepare the Creamy Filling:
- In a mixing bowl, combine Greek yogurt, feta cheese, Parmesan, cream cheese, olive oil, oregano, dill, and lemon zest. Mix until smooth.
