1 ripe avocado

1 clove garlic

For the Mediterranean Slaw
1 cup cucumber, finely diced
1 cup cherry tomatoes, quartered
½ cup red onion, finely chopped
¼ cup fresh parsley, chopped
2 tbsp olive oil
1 tbsp red wine vinegar or lemon juice
Salt & pepper, to taste
For Serving
8 small corn or flour tortillas, warmed

Instructions
1. Make the Avocado Cream
1. Blend avocado, yogurt, lime juice, olive oil, garlic, cilantro, and salt until smooth.
2. Chill until ready to use.

1. In a bowl, toss cucumber, tomatoes, onion, parsley, olive oil, vinegar/lemon juice, salt, and pepper.
2. Let sit 10 minutes to meld flavors.
