For the Filling:

½ cup ricotta or crumbled feta (or a mix)

2 tbsp Greek yogurt or labneh

1 small garlic clove, minced

1 tbsp chopped parsley or mint

½ tsp lemon zest or juice

Optional: chili flakes or sumac

1. Prep the Eggplant:

Preheat oven to 425°F (220°C).

Lay eggplant slices on a parchment-lined tray. Brush with olive oil, season with salt, pepper, and oregano.

Roast for 15–20 minutes, flipping halfway, until soft and golden. Let cool slightly.

2. Make the Filling:

In a bowl, mix ricotta/feta, yogurt, garlic, herbs, lemon, and seasoning until creamy and spreadable. Taste and adjust.

3. Assemble the Rolls:

Place 1 tbsp of filling at one end of each eggplant slice and roll up gently.
