 Ingredients

2 cups fresh spinach, finely chopped

¾ cup ricotta cheese (well-drained)

½ cup crumbled feta cheese

1 large egg

¼ cup grated parmesan (optional)

¼ cup breadcrumbs (or oat flour)

2 tbsp all-purpose flour

1 small onion, finely grated or minced

2 cloves garlic, minced

1 tsp dried oregano

½ tsp dried dill or parsley

Salt & black pepper, to taste

Olive oil (for pan or brushing)

 Instructions

1️⃣ Prep the Spinach

Lightly sauté spinach in a dry pan for 1–2 minutes until just wilted. Cool slightly, then squeeze out excess water and chop finely.

2️⃣ Make the Mixture

In a bowl, mix spinach, ricotta, feta, egg, parmesan, breadcrumbs, flour, onion, garlic, herbs, salt, and pepper until combined.

Rest mixture 5 minutes to firm up.

3️⃣ Shape

Form into small patties using lightly oiled hands.

4️⃣ Cook (Choose One)

Pan-Fry:

Heat a thin layer of olive oil in a pan over medium heat.

Cook patties 3–4 minutes per side until golden.

Oven-Bake (Healthier):

Preheat oven to 190°C (375°F).

Place patties on a lined tray, brush lightly with olive oil.

Bake 18–20 minutes, flipping halfway.

 Tips

Chill mixture 10 minutes if too soft.

Add lemon zest for extra freshness.

Serve with tzatziki or yogurt–lemon dip.
