Ingredients

4 slices rustic or sourdough bread

2 tbsp olive oil or softened butter

2 cups fresh spinach

1 garlic clove, minced

½ tsp dried oregano (or Italian herbs)

¼ tsp chili flakes

½ cup shredded mozzarella (or provolone)

¼ cup crumbled feta cheese

2 tbsp sun-dried tomatoes, chopped

2 tbsp kalamata olives, sliced

Fresh basil or parsley, chopped (for garnish)

Instructions

Saute spinach:

Heat 1 tsp olive oil in a pan.

Add garlic, spinach, oregano, and chili flakes.

Cook until spinach wilts (2–3 mins). Set aside.

Assemble sandwich:

Spread olive oil or butter on one side of each bread slice.

On the non-oiled side, layer mozzarella, sautéed spinach, feta, sun-dried tomatoes, and olives.

Top with another bread slice (oiled side facing out).

Grill:

Heat a skillet or pan on medium.

Cook sandwiches for 3–4 mins per side until bread is golden brown and cheese is melted.

Serve:

Sprinkle with fresh basil or parsley.

Slice in half and serve warm with a side salad or tomato soup.
