Mediterranean Super Crunchy Mix Salad
This refreshing and crunchy salad is packed with crisp veggies, fresh herbs, roasted chickpeas, and a zesty lemon-olive oil vinaigrette. It’s naturally vegan, gluten-free, and full of Mediterranean sunshine!

Ingredients
Crunchy Base:
1 cup shredded red cabbage
1 cup shredded green cabbage
1 large carrot, julienned or grated
1 large cucumber, diced
1 red bell pepper, finely chopped
½ cup radishes, thinly sliced
¼ cup red onion, finely chopped
¼ cup fresh parsley, chopped
2 tbsp fresh mint (optional, for added freshness)
Crispy Chickpeas (optional topping):
1 can chickpeas, drained, rinsed, and patted dry
1 tbsp olive oil
½ tsp smoked paprika
½ tsp garlic powder
Salt & pepper to taste
Add-ons (optional but great!):
¼ cup Kalamatas olives, sliced
2 tbsp toasted sunflower or pumpkin seeds
Crumbled feta or vegan feta (optional)
Lemon-Garlic Vinaigrette:
¼ cup extra virgin olive oil
2 tbsp fresh lemon juice
1 tbsp red wine vinegar
1 garlic clove, grated or finely minced
1 tsp dijon mustard
Salt & black pepper to taste
Instructions
1. (Optional) Make Crispy Chickpeas
Preheat oven to 425°F (220°C).
Toss chickpeas with olive oil, smoked paprika, garlic powder, salt, and pepper.
Roast on a baking sheet for 15–20 minutes, shaking halfway, until crispy.
2. Prep the Veggies
Finely chop, shred, and slice all veggies. The more uniform and thin, the crunchier the texture.
Combine in a large salad bowl.
3. Make the Dressing
Whisk together all vinaigrette ingredients until emulsified.
4. Assemble the Salad
Toss the chopped veggies with the vinaigrette.
Top with crispy chickpeas, olives, seeds, and optional feta.
Serve immediately for maximum crunch, or chill for 10–15 minutes for flavor meld.

Make it a meal: Add quinoa, bulgur, or grilled tofu/halloumi.
Storage tip: Store dressing separately if making ahead to preserve crunch.
