1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 cup frozen corn kernels, thawed

1 tsp smoked paprika

1 tsp dried oregano

½ tsp ground coriander

1 tsp salt

½ tsp black pepper

1 cup crumbled feta cheese

1 cup shredded mozzarella or kasseri cheese

¼ cup chopped fresh parsley or cilantro

3 tbsp olive oil

Instructions

Step 1: Cook the Rice

1. Preheat oven to 375°F (190°C).

2. In a saucepan, combine rice and broth; bring to a boil.

3. Reduce heat, cover, and simmer for 15–20 minutes (check package instructions for exact timing) until rice is cooked and liquid absorbed.

Step 2: Prepare the Filling

1. While rice cooks, heat olive oil in a large skillet over medium heat.

2. Add onion and garlic, sauté until softened (3–4 minutes).

3. Add ground meat, cook until browned and cooked through, breaking up clumps.

4. Stir in bell pepper, cherry tomatoes, corn, cumin, smoked paprika, oregano, coriander, salt, and pepper. Cook for another 5 minutes, letting flavors meld.

 

Step 3: Assemble the ingredients 

1. In a large mixing bowl, combine cooked rice, meat and vegetable mixture, half of the feta cheese, and half of the shredded cheese. Mix well.

2. Transfer mixture to a greased 9×13 inch (23×33 cm) baking dish.

3. Sprinkle remaining feta and shredded cheese evenly over the top.

Step 4: Bake

1. Bake for 20–25 minutes until cheese is melted and bubbly, and the top is golden.

Step 5: Garnish and Serve

1. Remove from oven, sprinkle fresh parsley or cilantro on top.

2. Let rest for 5 minutes before serving.
