1 tsp lemon zest
1 tsp fresh thyme or oregano

Instructions
1. Make the Crust
Mix flour, salt, and oregano.
Cut in butter until crumbly.
Add ice water gradually, just until dough comes together.
Form into a disc, wrap, and chill 20 minutes.
2. Prepare the Vegetables
Toss vegetables with olive oil, salt, and pepper.
Roast at 200°C (400°F) for 15–20 minutes until tender.
Cool slightly.
3. Prepare Ricotta Base
Mix ricotta, Parmesan, lemon zest, and herbs until smooth.
4. Assemble the Galette
Roll dough into a 12-inch circle on parchment.
Spread ricotta mixture, leaving a 2-inch border.
Layer roasted vegetables and toppings.
Fold edges over filling, pleating gently.
5. Bake
Brush crust with olive oil or egg wash.
Bake at 190°C (375°F) for 35–40 minutes until golden.
Cool slightly before slicing.
