Cook Time: 12–15 minutes
Total Time: 35 minutes
Ingredients
For the Dough (or use store-bought):
250 g (2 cups) all-purpose flour
160 ml (⅔ cup) warm water
1 tsp instant yeast
½ tsp sugar
½ tsp salt
1 tbsp olive oil
For the Topping:
200 g stracciatella cheese (or torn burrata)
1 medium zucchini, thinly sliced lengthwise into ribbons (use a vegetable peeler or mandoline)
2 tbsp ricotta cheese
2 tbsp grated Parmesan cheese
1 clove garlic, minced
2 tbsp extra virgin olive oil (plus extra for drizzling)
½ tsp dried oregano
1 tbsp fresh basil leaves
Freshly cracked black pepper & salt to taste
ℹ️ Instructions
1. Make the Dough (skip if using store-bought)
1. In a small bowl, combine warm water, yeast, and sugar. Let sit for 5–7 minutes until foamy.
2. In a mixing bowl, combine flour and salt.
3. Add yeast mixture and olive oil. Mix until a dough forms.
4. Knead on a floured surface for 7–8 minutes until smooth.
5. Place in a lightly oiled bowl, cover, and let rise for 1 hour or until doubled.
2. Prepare the Oven
Preheat oven to 250°C (480°F) with a pizza stone or inverted baking sheet inside for best crust results.
3. Prep the Zucchini
Lay zucchini ribbons on a paper towel, sprinkle lightly with salt, and let sit for 10 minutes to draw out moisture. Pat dry
4. Assemble the Pizza
1. Roll dough into a thin round (about 10–12 inches).
2. Transfer to parchment paper for easy transfer to oven.
3. In a small bowl, mix ricotta with minced garlic and 1 tbsp olive oil. Spread evenly over dough.
4. Sprinkle Parmesan over ricotta.
5. Arrange zucchini ribbons on top in a loose, layered pattern. Drizzle with 1 tbsp olive oil and sprinkle with oregano, pepper, and a pinch of salt.
5. Bake
Slide pizza (with parchment) onto the preheated stone/baking sheet. Bake 8–10 minutes until crust is golden and zucchini edges are lightly charred.
6. Add the Stracciatella
Remove pizza from oven. Spoon stracciatella generously over the hot pizza so it softens and spreads slightly.
Garnish with fresh basil leaves and a final drizzle of extra virgin olive oil.
Notes & Tips
No stracciatella? Use burrata or fresh mozzarella torn into pieces.
Extra crunch: Add toasted pine nuts after baking.
Herb swap: Try fresh mint or parsley for a different Mediterranean twist.
Make it richer: Drizzle with a touch of truffle oil before serving.
