Ingredients

3 medium zucchinis, grated

3 garlic cloves, minced

1/2 cup crumbled feta cheese (optional for non-vegan)

1/3 cup breadcrumbs (use gluten-free if needed)

2 tbsp chopped fresh parsley

1 tbsp chopped fresh dill or oregano

Zest of 1 lemon

1/4 tsp red pepper flakes (optional)

Salt and pepper, to taste

2 tbsp olive oil (plus extra for baking)

1. Prepare the Zucchini

Grate the zucchinis and place in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible to avoid soggy bites.

2. Mix the Ingredients

In a large bowl, combine grated zucchini, minced garlic, feta, breadcrumbs, parsley, dill, lemon zest, red pepper flakes, salt, and pepper. Mix well.

3. Form the Bites

Shape the mixture into small, bite-sized patties or balls (about 1.5 inches in diameter).

4. Bake

Preheat oven to 400°F (200°C).

Place zucchini bites on a parchment-lined baking sheet. Brush or spray lightly with olive oil.

Bake for 18-20 minutes, flipping halfway, until golden and crispy.

5. Serve

Serve warm with a side of tzatziki, hummus, or a lemony yogurt dip.
