Mediterranean Zucchini & Vegetable Rolls (Crispy & Cheesy)
These crispy zucchini rolls are filled with finely chopped vegetables, herbs, and cheese, then wrapped in thin pastry and pan-fried or baked until golden brown. They’re crunchy outside, soft and creamy inside, and perfect as an appetizer, snack, or light meal—very Mediterranean and family-friendly.

🧾 Ingredients
Filling
1 medium zucchini, finely chopped or grated (squeezed dry)
1 small carrot, finely diced
2 tbsp chopped green onion or spring onion
2 tbsp fresh parsley or dill, finely choppe
½ cup mozzarella or mild cheddar cheese (grated)
2 tbsp cream cheese or thick yogurt
¼ tsp black pepper
Salt, to taste
Wrapping
8–10 spring roll wrappers or thin pastry sheets (samosa sheets work too)
1 tbsp olive oil (for brushing or frying)
Optional Yogurt Dip
½ cup plain Greek yogurt
Salt to taste
Chopped parsley or mint
👩🍳 Instructions
1. Prepare the filling
In a bowl, combine zucchini, carrot, green onion, herbs, cheese, cream cheese, salt, and pepper.
Mix until creamy and well combined.
2. Assemble the rolls
Place 2 tablespoons of filling on one edge of the wrapper.
Fold sides inward and roll tightly (like in the image).
3. Cook
Pan-fry: Heat a shallow pan with a little olive oil. Fry rolls on medium heat until golden on all sides.
OR
Bake: Brush rolls with olive oil and bake at 190°C (375°F) for 15–18 minutes, turning once.
4. Serve
Cut in half for presentation.
Serve warm with yogurt dip.

Always squeeze water from zucchini to avoid soggy rolls
Chop vegetables very finely for a smooth filling like the image
For extra crispiness, brush lightly with oil before baking
You can air-fry at 180°C for 10–12 minutes
