Mexican Meatloaf Burrito Recipe
Ingredients
For the Meatloaf:
- 1 pound ground beef
- 1/2 pound ground pork
- 1 cup bread crumbs
- 1/2 cup milk
- 1 egg
- 1 small onion, finely chopped
- 1 red bell pepper, finely chopped
- 1 jalapeño, finely chopped (optional, for extra heat)
- 2 cloves garlic, minced
- 1/4 cup chopped fresh cilantro
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
For the Burritos:
- Large flour tortillas
- Refried beans
- Shredded lettuce
- Shredded cheese (cheddar or Mexican blend)
- Diced tomatoes
- Sliced avocado or guacamole
- Salsa or pico de gallo
- Sour cream
- Lime wedges (for serving)
Instructions
For the Meatloaf:
- Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
- In a large bowl, combine the ground beef, ground pork, bread crumbs, milk, egg, onion, red bell pepper, jalapeño (if using), garlic, cilantro, cumin, chili powder, smoked paprika, salt, and black pepper. Mix until well combined.
- Transfer the meat mixture to the prepared loaf pan and press it down evenly.
- Bake for 45-55 minutes, or until the internal temperature reaches 160°F (70°C) and the meatloaf is cooked through.
- Let the meatloaf rest for 10 minutes before slicing.
For the Burritos:
- Warm the flour tortillas in a dry skillet over medium heat or in the microwave for a few seconds until pliable.
- Spread a layer of refried beans in the center of each tortilla.
- Add slices of the meatloaf on top of the refried beans.
- Top with shredded lettuce, shredded cheese, diced tomatoes, sliced avocado or guacamole, salsa or pico de gallo, and a dollop of sour cream.
- Fold in the sides of the tortilla and then roll it up tightly from the bottom to form a burrito.
- Serve with lime wedges on the side.
