Ingredients

Filling

200 g cooked chicken breast, shredded or diced

½ cup shredded mozzarella or cheddar cheese

1 tbsp olive oil

¼ tsp black pepper

Salt, to taste

Quesadillas

3 small tortillas (cut in half to make 6 mini quesadillas)

Butter or olive oil for pan-cooking

Optional Dips

Greek yogurt or sour cream

Salsa or guacamole

Instructions

1️⃣ Prepare the filling

In a bowl, mix shredded chicken, cheese, olive oil, herbs, salt, and pepper.

2️⃣ Assemble quesadillas

Place 2–3 tbsp of filling on one half of each tortilla half.

Fold the other half over to make a semicircle.

3️⃣ Cook

Heat a non-stick pan over medium heat.

Lightly brush with butter or olive oil.

Cook each mini quesadilla 2–3 minutes per side, until golden and cheese is melted.

4️⃣ Serve
