Instructions

1. Prepare the Eggplant

Slice eggplant lengthwise into ¼-inch thin slices.

Brush both sides lightly with olive oil.

Season with salt, pepper, garlic powder, and oregano.

2. Cook the Eggplant

Choose any method:

🔸 Grill: 3–4 minutes each side until tender.
🔸 Pan-sear: Cook on medium heat 3–5 minutes per side until soft and lightly golden.

Add a small spoon of diced tomato.

Add a basil leaf on top.

Roll the eggplant slice tightly from bottom to top.

Secure with a toothpick if needed.

Drizzle with a little olive oil.

Add balsamic glaze.

Sprinkle basil or nuts on top.

Serve warm or chilled!

TIPS + NOTES

If your eggplant slices break, they were too thin—cut slightly thicker next time.

Sundried tomatoes make the rolls sweeter and more intense in flavor.

For extra protein, add a small piece of grilled chicken inside each roll.

These store well in the fridge for 2–3 days.
