Ingredients

1 cup mozzarella cheese, cut into small sticks or mini mozzarella pearls
1 medium tomato, finely diced (or ¼ cup sundried tomatoes, chopped)
6–8 fresh basil leaves, torn
1 tbsp balsamic glaze
1 tbsp pine nuts or crushed walnuts

Instructions
1. Prepare the Eggplant
Slice eggplant lengthwise into ¼-inch thin slices.
Brush both sides lightly with olive oil.
Season with salt, pepper, garlic powder, and oregano.
2. Cook the Eggplant
Choose any method:
🔸 Grill: 3–4 minutes each side until tender.
🔸 Pan-sear: Cook on medium heat 3–5 minutes per side until soft and lightly golden.
🔸 Oven Roast: Bake at 200°C (400°F) for 15–18 minutes.
Let cool slightly so they are easy to roll.
3. Assemble the Rolls
Place one mozzarella stick on the bottom of a cooked eggplant slice.
Add a small spoon of diced tomato.
Add a basil leaf on top.
Roll the eggplant slice tightly from bottom to top.
Secure with a toothpick if needed.
4. Finishing Touch
Drizzle with a little olive oil.
Add balsamic glaze.
Sprinkle basil or nuts on top.
