Ingredients
Biscuit Base
1 cup digestive biscuits or graham crackers, crushes
3 tablespoons melted butter
Cheesecake Filling
1 cup cream cheese, softened
½ cup Greek yogurt (Mediterranean-style & lighter)
⅓ cup condensed milk (or honey for a lighter version)
Zest of 2 key limes (or regular limes)
¼ cup fresh key lime juice
1 teaspoon vanilla extract
Topping (Optional)
Light whipped cream
Lime zest or thin lime slices
Instructions
1. Prepare the base
Mix crushed biscuits with melted butter. Press firmly into lined muffin tin cups. Chill for 10 minutes to set.
2. Make the filling
In a bowl, beat cream cheese until smooth. Add Greek yogurt, condensed milk, lime zest, lime juice, and vanilla. Mix until creamy and silky.
3. Assemble
Spoon the cheesecake mixture over the chilled bases and smooth the tops.
4. Chill
Refrigerate for at least 2–3 hours (or overnight) until fully set.
5. Decorate & Serve
Top with whipped cream and lime zest before serving.
