INGREDIENTS:

• 2 boneless, skinless chicken breasts

• 1/4 cup olive oil

• 1/4 cup freshly squeezed orange juice

• 1/4 cup freshly squeezed lime juice

• 4 cloves garlic, minced

• 1 teaspoon ground cumin

• 1 teaspoon oregano

• Salt and pepper to taste

• 1 head romaine lettuce, chopped

• 1 cup cherry tomatoes, halved

• 1/2 red onion, thinly sliced

• 1 avocado, sliced

• 1/4 cup fresh cilantro, chopped

INSTRUCTIONS:

1. In a bowl, whisk together olive oil, orange juice, lime juice, garlic, cumin, oregano, salt, and pepper to create the mojo marinade.

2. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 1 hour, or up to 8 hours.

3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C).

4. While the chicken is grilling, prepare the salad by combining the romaine lettuce, cherry tomatoes, red onion, avocado, and cilantro in a large bowl.

5. Slice the grilled chicken and place it on top of the salad. Drizzle with any remaining mojo sauce and serve immediately.
