Ingredients:
For the Pastry:
- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 4 large eggs
For the Cream Filling:
- 2 cups heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Directions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or silicone baking mat.
- In a medium saucepan, bring water and butter to a boil over medium-high heat.
- Once the mixture is boiling, reduce the heat to low and add the flour all at once. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan, about 1-2 minutes.
- Remove the pan from heat and let it cool for 5 minutes.
- Add eggs, one at a time, beating well after each addition, until the mixture is smooth and glossy.
- Spoon the dough into a pastry bag fitted with a large round tip or simply use a spoon to drop mounds of dough onto the prepared baking sheet, leaving some space between each mound.
- Bake in the preheated oven for 30-35 minutes, or until the cream puffs are golden brown and puffed up. Avoid opening the oven door during baking, as this may cause them to collapse.
- Once baked, remove the cream puffs from the oven and transfer them to a wire rack to cool completely.
- While the cream puffs are cooling, prepare the cream filling. In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Once the cream puffs are cooled, use a sharp knife to slice them in half horizontally. Fill each puff generously with the whipped cream filling.
- Place the top halves of the cream puffs back on and dust with powdered sugar, if desired.
- Serve immediately or refrigerate until ready to serve. Enjoy the heavenly goodness of Mom’s Famous Cream Puffs!
