Ingredients:(Servings:4)
For the Chicken Bites:
1 ½ lbs chicken breast or thighs, cut into bite-sized pieces
1 ½ tsp salt
½ tsp black pepper
½ tsp paprika
½ tsp garlic powder
2 tbsp cornstarch (for crispier chicken)
2 tbsp olive oil
For the Mushroom Sauce:
2 tbsp unsalted butter
8 oz mushrooms (cremini, button, or shiitake), sliced
3 cloves garlic, minced
½ cup chicken broth
½ cup heavy cream (or half-and-half)
1 tsp Dijon mustard (optional, for depth of flavor)
¼ cup grated Parmesan cheese (for a creamy, umami kick)
1 tsp fresh thyme or ½ tsp dried thyme
1 tbsp chopped fresh parsley (for garnish)
Instructions
1. Cook the Chicken Bites
In a bowl, season the chicken with salt, pepper, paprika, and garlic powder. Toss with cornstarch for a light crisp.
Heat 2 tbsp olive oil in a large skillet over medium-high heat.
Add the chicken pieces in a single layer and cook for 3-4 minutes per side until golden brown and cooked through. Remove and set aside.
2. Make the Mushroom Sauce
In the same skillet, melt 2 tbsp butter and add sliced mushrooms. Cook for 5-6 minutes until browned and softened.
Add minced garlic and cook for 30 seconds until fragrant.
Pour in chicken broth, scraping up any browned bits from the pan. Let it simmer for 2 minutes to reduce slightly.
Stir in heavy cream, Dijon mustard, Parmesan, and thyme. Simmer for 2-3 minutes until thickened.
3. Combine & Serve
Return the cooked chicken to the skillet, tossing to coat in the creamy mushroom sauce. Simmer for 1-2 minutes to heat through.
Garnish with fresh parsley and serve warm.
