You can basically use any kind of vegetable, fruit, leftover potatoes, etc., and they always turn out fantastic, so these are ideal if you don’t have much in the fridge.specifics:

- blend of red rice and beans
- spicy chickpeas with sesame (recipe below)
- sunflower seeds and avocado
- Sweet potatoes with roasted rosemary
- Edamame legumes
- Sesame-tahini dressing with blueberries (recipe below)
- Hot sesame legumes
Ingredients:
- One can of drained chickpeas
- One tablespoon soy sauce
- 1 tablespoon crunchy chilli oil
- A half-tsp of sesame oil
- Toasted sesame seeds, one tablespoon
Method:
Combine all the ingredients, excluding the sesame seeds, in a bowl.
2. Cook them till crispy, around 5 to 10 minutes on a pan.
3. Add the sesame seeds last.
