Ingredients
Nutty Chocolate Base
1 cup mixed nuts (almonds, peanuts, walnuts, or cashews)
¾ cup rolled oats
2 tbsp unsweetened cocoa powder
2–3 tbsp honey or maple syrup
2 tbsp peanut butter or almond butter
1 tsp vanilla extract
Pinch of salt
Cashew Cream Layer
¾ cup cashews, soaked (30 minutes)
2 tbsp honey or maple syrup
2–3 tbsp milk or coconut milk
½ tsp vanilla extract
Optional Topping
Melted dark chocolate
Chopped nuts
Instructions
Make the Base
Add nuts and oats to a food processor; pulse until finely chopped.
Add cocoa powder, sweetener, nut butter, vanilla, and salt.
Process until the mixture holds together when pressed.
Press firmly into a lined square pan.
Prepare the Cashew Cream
Drain soaked cashews and blend with sweetener, milk, and vanilla until smooth.
Spread evenly over the chocolate base.
Chill & Serve
Refrigerate for 1–2 hours until set.
Add toppings if desired, slice into bars, and serve.
