This One-Pan Chicken Burrito Bowl has everything you love about a burrito — juicy seasoned chicken, rice, black beans, corn, tomatoes, and spices — all cooked together in one skillet. Top it with avocado, cheese, lime, or salsa for the ultimate bowl!

 Ingredients

For the Bowl:

2 tbsp olive oil

1 lb (450g) boneless skinless chicken breasts or thighs, cut into bite-sized pieces

1 cup uncooked long grain rice (like basmati or jasmine)

1 can (15 oz) black beans, drained and rinsed

1 cup frozen corn kernels (or canned, drained)

1 cup diced tomatoes (or canned, drained)

2 ¼ cups chicken broth or water

1 tsp chili powder

1 tsp ground cumin

1/2 tsp smoked paprika

1/2 tsp garlic powder

Salt & pepper to taste

Juice of 1 lime

Optional Toppings:

1 avocado, sliced

1/2 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro

Lime wedges

Sour cream or Greek yogurt

Salsa or hot sauce

 Instructions

1. Cook the Chicken

Heat olive oil in a large deep skillet or Dutch oven over medium-high heat.

Add chicken pieces, season with salt, pepper, chili powder, cumin, paprika, and garlic powder.

Sear for 4–5 minutes until golden and mostly cooked through. Remove to a plate.

2. Saute and Combine

In the same pan, add a splash of oil if needed.

Stir in rice, beans, corn, tomatoes, and chicken broth. Mix well.

Return the seared chicken and any juices back to the pan.

Stir, bring to a gentle boil.

3. Simmer

Reduce heat to low, cover, and simmer for 18–20 minutes, or until rice is cooked and liquid is absorbed.

Turn off heat and let sit covered for 5 minutes.

Fluff with a fork and squeeze lime juice over top.

4. Serve

Spoon into bowls. Add toppings like avocado, shredded cheese, cilantro, and sour cream. Enjoy warm!
