One-Pan Creamy Tortellini Primavera

Ingredients (Serves 4)

1 tbsp olive oil

2 cloves garlic, minced

1 small yellow onion, diced

1 cup broccoli florets

1 cup sliced bell peppers (red, yellow, or orange)

1 small zucchini, sliced into half-moons

1 cup cherry tomatoes, halved

1 (9 oz) package refrigerated cheese tortellini

1 ½ cups vegetable broth or chicken broth

½ cup heavy cream

½ cup grated Parmesan cheese

1 tsp Italian seasonin

Salt & pepper, to tast

Fresh basil or parsley, for garnish (optional)

Instructions

Sauté the vegetables

In a large skillet, heat olive oil over medium heat. Add garlic and onion, sauté for 2–3 minutes until fragrant and slightly softened.

Add veggies

Stir in broccoli, bell peppers, and zucchini. Cook for 5 minutes, stirring occasionally, until they begin to soften.

Add tortellini and liquids

Stir in cherry tomatoes, tortellini, broth, cream, Italian seasoning, salt, and pepper. Mix well and bring to a simmer.

Simmer and thicken

Cover and cook for 5–7 minutes, stirring occasionally, until tortellini are tender and sauce has slightly thickened.

Add cheese

Stir in Parmesan until melted and the sauce becomes creamy. If too thick, add a splash more broth or cream.

Serve

Garnish with fresh basil or parsley if desired. Serve warm — no side dish needed!

✅ Tips

Use frozen tortellini if that’s what you have — just simmer a few minutes longer.

Add spinach or peas at the end for extra green.
