One-Pot Broccoli Cheese Orzo

Total Time: 30-35 minutes
Ingredients:
1 cup orzo pasta
2 cups broccoli florets (fresh or frozen)
4 cups vegetable broth
1 cup shredded cheddar cheese
1 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
1 tsp dried thyme
Salt & black pepper, to taste
Optional: Fresh parsley, extra cheese, or lemon juice
Instructions:
Sauté the Aromatics:
Heat olive oil in a large pot over medium heat.
Add chopped onion & sauté 3-4 minutes until softened.
Stir in garlic & thyme; cook for 1 minute until fragrant.
Cook the Orzo:
Add orzo pasta & vegetable broth.
Bring to a gentle boil, then reduce heat.
Cook 8-10 minutes, stirring occasionally, until orzo is tender & most liquid is absorbed.
Add Broccoli:
Stir in broccoli during the last 5 minutes of cooking.
Let it cook until tender but still vibrant green.
Melt the Cheese:
Reduce heat to low & stir in cheddar cheese until smooth & creamy.
Season with salt & black pepper to taste.
Serve & Enjoy:
Garnish with parsley, extra cheese, or lemon juice if desired.
Serve as a standalone dish or pair with grilled chicken or shrimp.
