12 oz (340 g) pasta (penne, rotini, or spaghetti)

2 tbsp olive oil

3 cloves garlic, minced

1 pint (2 cups) cherry tomatoes, halved

½ cup Kalamata olives, pitted and halved

1 small red onion, thinly sliced

3 cups vegetable or chicken broth

1 tsp dried oregano

½ tsp red pepper flakes

Salt & black pepper, to taste

1 cup baby spinach (optional, for extra greens)

½ cup crumbled feta cheese

2 tbsp fresh parsley or basil, chopped

Zest of 1 lemon

Instructions

Saute aromatics

Heat olive oil in a large pot over medium heat.

Add garlic and onion; sauté 2–3 minutes until fragrant.

Add pasta & vegetables

Stir in pasta, cherry tomatoes, olives, oregano, red pepper flakes, salt, and pepper.

Pour in broth and bring to a boil.
