Ingredients:
VINAIGRETTE

  1. 1/2 cup extra virgin olive oil
  2. 1/4 cup balsamic or champagne vinegar
  3. 1 tablespoon honey
  4. 1/2 shallot, finely chopped
  5. 1 clove garlic, grated
  6. 1 teaspoon lemon zest
  7. 1/4 cup chopped fresh basil
  8. 2 tablespoons chopped fresh oregano
  9. 1 tablespoon chopped fresh dill
  10. 1 tablespoon chopped fresh thyme
  11. Red pepper flakes, to taste
  12. Kosher salt and black pepper, to taste
  13. SALAD
  14. 1 1/2 – 2 cups cherry tomatoes, halved if large
  15. 2-3 peaches, sliced into wedges
  16. 1 cup pitted fresh cherries
  17. 8 ounces burrata cheese, at room temperature
  18. 1/4 cup toasted pumpkin seeds

Directions:

  1. To make the vinaigrette: Combine all vinaigrette ingredients in a glass jar and whisk until smooth. Taste and adjust the chili flakes, salt, and pepper as needed.
    Salad preparation: In a large bowl, toss the tomatoes, peaches, and cherries with 1/3 of the dressing. Let sit for 15 minutes at room temperature or up to 4 hours in the fridge.
  2. Serving: Break the balls of burrata around the salad. Drizzle with the remaining vinaigrette, top with pumpkin seeds, and sprinkle additional fresh herbs. Serve with grilled or toasted bread.
