3 tbsp olive oil

4–5 garlic cloves, minced

1 tbsp lemon juice

1 tsp lemon zest

1 ½ tsp dried oregano

1 tsp paprika

½ tsp salt

½ tsp black pepper

For the Veggies

2 cups potatoes, cubed

1 cup carrots, sliced

1 cup bell peppers, chopped

1 cup zucchini, chopped

1 red onion, cut into wedges

2 tbsp olive oil

1 tsp garlic powder

1 tsp Italian seasoning or oregano

Instructions

1. Prep the Chicken

In a large bowl:

Add drumsticks

Add olive oil, garlic, lemon juice, lemon zest

Add oregano, thyme, rosemary, paprika, salt, and pepper

Mix well to coat evenly.
