Pan-Seared Mediterranean Cod with Tomato Basil Sauce

Ingredients:
- – 2 Cod fillets
- – 1 can (14.5 oz) Diced tomatoes
- – 1/4 cup Fresh basil, chopped
- – 2 Garlic cloves, minced
- – 1 Onion, diced
- – 1 Lemon wedge
- – 2 cups Spinach
- – 1/3 cup Black olives, sliced
- – Salt and pepper, to taste
- – 2 tbsp Olive oil
Directions:
1. Prep the Ingredients: Dice the onion, mince the garlic, and chop the fresh basil.
2. Sear the Cod: Season the cod fillets with salt and pepper. In a pan, heat the olive oil over medium heat. Sear the cod for about 3-4 minutes on each side until golden brown. Once done, remove the cod from the pan and set it aside.
3. Make the Sauce: In the same pan, add the diced onion and minced garlic. Sauté until they become fragrant, about 2-3 minutes. Then, add the diced tomatoes and cook until they are soft, about another 3-4 minutes. Stir in the chopped basil.
4. Combine Cod and Sauce: Return the seared cod to the pan, spoon the tomato basil sauce over the top, and let it simmer for a few minutes to meld the flavors.
5. Serve: Plate the cod, garnish with a lemon wedge, and serve alongside sautéed spinach and sliced black olives
