Paprika Chicken with Greek Salad
For the Paprika Chicken:
2 chicken breasts
1 tbsp paprika (smoked or sweet, your choice)
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cayenne pepper (optional for heat)
Salt & pepper to taste
2 tbsp olive oil
Juice of half a lemon
Instructions:
Mix paprika, garlic powder, onion powder, cayenne, salt, and pepper in a bowl.
Rub the chicken breasts with olive oil and then coat evenly with the spice mix.
Heat a skillet over medium heat and cook chicken about 6-7 minutes per side until cooked through.
Squeeze lemon juice over the chicken before serving.
For the Greek Salad:
1 cucumber, diced
2 tomatoes, chopped
1/2 red onion, thinly sliced
1/2 cup Kalamata olives
1/2 cup feta cheese, crumbled
2 tbsp olive oil
1 tbsp red wine vinegar or lemon juice
1 tsp dried oregano
Salt and pepper to tast
Instructions:
In a bowl, combine cucumber, tomatoes, red onion, olives, and feta.
Drizzle olive oil and vinegar/lemon juice.
Sprinkle oregano, salt, and pepper, then toss gently.
Serve the paprika chicken on a plate alongside the fresh Greek salad. Perfect for a light, flavorful meal!
