Potato-Stuffed Cheese Chicken with Broccoli

Tender chicken breasts are stuffed with creamy, cheesy mashed potatoes and baked until juicy and golden, then served with perfectly cooked broccoli for a comforting, flavorful dinner.

Ingredients:

For the Potato Stuffing:

2 medium potatoes, peeled and diced

1 tbsp olive oil

1/4 cup shredded cheddar (or mozzarella)

Salt and pepper, to taste

Optional: garlic powder or chives for extra flavor

For the Chicken:

4 boneless, skinless chicken breasts

Salt, pepper, garlic powder, paprika – for seasoning

4 slices of mozzarella or provolone cheese (or more shredded cheese)

2 tbsp olive oil(for searing)

For the Broccoli:

2 cups broccoli florets

Salt and pepper to taste

Optional: a squeeze of lemon or grated Parmesan for serving

Instructions:

1. Make the Potato Filling:

Boil diced potatoes until fork-tender (10–12 minutes). Drain and mash with butter, salt, pepper, and cheese. Let cool slightly.

2. Prepare Chicken Breasts:

Butterfly each chicken breast (slice it horizontally but not all the way through) and open it like a book.

Season both sides with salt, pepper, garlic powder, and paprika.

3. Stuff the Chicken:

Spread 2–3 tablespoons of cheesy mashed potato inside each breast.

Add a layer of mozzarella or provolone.

Fold and secure with toothpicks if needed.

4. Cook the Chicken:

Heat oil or butter in a large skillet over medium-high heat. Sear each stuffed chicken breast for 2–3 minutes per side until golden brown.

Transfer to a baking dish. Bake at 375°F (190°C) for 20–25 minutes, or until the chicken is fully cooked (internal temp 165°F/74°C).

5. Steam or Roast the Broccoli:

While the chicken bakes, steam broccoli for 5–6 minutes or roast with olive oil at 400°F for 15 minutes.

6. Serve:

Plate chicken with a side of broccoli. Optionally drizzle with garlic butter or Alfredo sauce for extra richness.

Optional Add-ons:

Top with a drizzle of cream sauce or extra cheese before baking.

Add caramelized onions or sauteed spinach to the stuffing.
