Pepper & Halloumi Pide Description:
Pide is often described as the “Turkish pizza,” with a soft, boat-shaped flatbread base and various toppings. This version features caramelized peppers and crispy golden halloumi, making it a vegetarian delight that’s both comforting and flavor-packed.
Ingredients (Serves 2–3): For the Dough:
2 cups all-purpose flour
1 tsp instant yeast
½ tsp sugar
½ tsp salt
¾ cup warm water (approx.)
1 tbsp olive oil
For the Topping:
1 block halloumi cheese (about 200g), sliced
1 tbsp olive oil
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 small red onion, sliced
2 cloves garlic, minced
1 tsp smoked paprika (optional)
Salt & black pepper, to tast
Fresh parsley, for garnish
Instructions:
1. Prepare the Dough (Time: 1 hr total including rise)
In a large bowl, mix yeast, sugar, and warm water. Let it sit for 5 mins.
Add flour, salt, and olive oil. Mix to form a dough.
Knead for 8–10 minutes until smooth.
Cover and let rise in a warm place for 45 minutes or until doubled in size.
2. Cook the Veggies & Halloumi (Time: 15 mins)
Heat olive oil in a skillet over medium heat.
Sauté sliced onion and garlic for 1–2 minutes.
Add bell peppers and cook until slightly soft (5–6 mins).
Season with salt, pepper, and smoked paprika.
In a separate pan or grill, fry halloumi slices for 2–3 mins per side until golden.
3. Shape & Assemble the Pide (Time: 10 mins)
Preheat oven to 220°C (430°F). Line a tray with parchment paper.
Divide dough in half. Roll each half into an oval (~10 inches long).
Transfer to baking tray. Add pepper-onion mixture in the center.
Top with grilled halloumi slices.
Fold in the sides of the dough to create a “boat” shape, pinching the ends.
4. Bake (Time: 12–15 mins)
Bake for 12–15 minutes or until crust is golden brown.
