Perfect Chicken Salad Recipe
Ingredients:
2½ cups cooked chicken, chopped or shredded (rotisserie chicken works great)
½ cup mayonnaise (or half mayo, half Greek yogurt for a lighter touch)
1 stalk celery, finely diced
2 tbsp red onion, finely diced (optional)
1 tbsp Dijon mustard (adds tang!)
1 tsp lemon juice or apple cider vinega
Salt & pepper, to taste
Optional mix-ins:
¼ cup sliced grapes or dried cranberries
¼ cup chopped toasted pecans, almonds, or walnuts
1 tbsp chopped fresh dill or parsley
Instructions:
Prep ingredients – Cook and chop/shred chicken. Dice vegetables.
Mix base – In a large bowl, stir together mayo, mustard, lemon juice, salt, and pepper.
Combine – Add chicken, celery, onion, and any optional ingredients. Mix well.
Chill – Cover and refrigerate for at least 30 minutes to let flavors meld.
