INGREDIENTS:
- 2 boneless, skinless chicken breasts, cooked and diced
- 1 (12oz/375g) package coloured rotini pasta
- 1 broccoli, chopped into florets
- 1/2 cup cherry tomatoes, halved
- 5 tablespoons fresh basil, chopped
- 6 tablespoons pesto
- 12 black olives, pitted
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Method:
- Prepare the pasta in accordance with the instructions provided on the box. The broccoli should be added to the saucepan during the last four minutes of the cooking time. Run off. To a large bowl, add and mix.
- In a bowl, combine the chicken, tomatoes, basil, olives, pesto, and seasonings of your choice. In order to mix, stir. Refrigerate until ready to serve, and store in the refrigerator.
