Ingredients

4 large eggs

2 tbsp milk

Salt & black pepper

1 tbsp olive oil

1 small onion, chopped

1 cup baby spinach

½ cup bell pepper, chopped

¼–½ cup mozzarella or cheddar cheese, shredded

For the pesto

¼ cup basil pesto

For assembling

4 medium tortillas

Optional: sliced avocado, cherry tomatoes, or fresh basil

Instructions

1. Cook the potatoes

Heat 1 tbsp olive oil in a pan.

Add diced potatoes + a pinch of salt and pepper.

Cook 8–10 minutes until golden and tender.

Remove and set aside.

2. Saute veggies

In the same pan, add onion and bell pepper.

Cook 3–4 minutes.

Add spinach and let it wilt.

Remove and mix with potatoes.

3. Scramble the eggs

Whisk eggs with milk, salt, and pepper.

Pour into the pan on low heat.

Cook gently until soft and fluffy (not dry).

4. Assemble burritos

Warm tortillas. Then add in layers:
