Ingredients

For the Salad:

2 cups fresh pineapple, diced

1 large cucumber, diced (or 2 small cucumbers)

½ small red onion, thinly sliced

¼ cup fresh cilantro or mint, chopped

1 small jalapeno, finely chopped (optional, for heat)

½ cup cherry tomatoes, halved (optional)

For the Dressing:

2 tbsp fresh lime juice

1 tbsp honey or maple syrup

½ tsp salt (adjust to taste)

¼ tsp black pepper

½ tsp chili flakes seasoning (optional)

Instructions

1. Prepare the ingredients:

Dice the pineapple and cucumber into bite-sized pieces.

Thinly slice the red onion and finely chop the cilantro/mint.

If using, chop the jalapeno and halve the cherry tomatoes.

2. Make the dressing:

In a small bowl, whisk together lime juice, honey, salt, pepper, and chili flakes (if using).

3. Assemble the salad:

In a large mixing bowl, combine the pineapple, cucumber, red onion, and jalapeno.

Pour the dressing over the salad and toss well to combine.

4. Let it rest:
