2 green (unripe) plantains
Olive oil or avocado oil, for frying

2 cloves garlic, minced
1 cup cooked black beans (or canned, rinsed and drained)
¼ tsp ground cumin
¼ tsp smoked paprika (optional, mild)

Instructions
1. Prepare the Plantains
Cut off both ends of the plantains.
Slice the peel lengthwise and remove it carefully.
Cut plantains into 1-inch thick rounds.
2. First Fry
Heat oil in a skillet over medium heat.
Fry plantain slices for 2–3 minutes per side until lightly golden.
Remove and place on a paper towel.
3. Smash the Plantains
Using the bottom of a glass or plate, gently smash each fried plantain into a flat disc.
4. Second Fry (Crispy Finish)
Return smashed plantains to hot oil and fry again for 1–2 minutes per side, until golden and crispy.
Season immediately with salt.
5. Make the Black Beans
Heat olive oil in a small pan over medium heat.
Add garlic and sauté briefly until fragrant.
Stir in black beans, cumin, smoked paprika, salt, and pepper.
Warm for 4–5 minutes, lightly mashing some beans for texture.
Finish with lemon or lime juice.
6. Assemble
Top each crispy tostones with a spoonful of warm black beans.
Garnish with herbs, cheese, yogurt, or avocado as desired.
