For the towers:
3 medium beets (red or golden)
1 ripe pear (Bosc or Bartlett), thinly sliced
80–100g blue cheese (crumbled or sliced)
1 tbsp olive oil

Instructions
1. Roast the Beets
Preheat oven to 200°C (400°F).
Wrap whole beets in foil with a drizzle of olive oil, salt, and pepper.
Roast for 40–45 minutes until fork-tender.
Let cool, then peel and slice into ½-inch rounds.
2. Make the Balsamic Glaze
In a small saucepan, simmer balsamic vinegar over medium heat.
Reduce for 8–10 minutes until thick and syrupy.
Stir in honey if you prefer a sweeter glaze.
Let cool (it thickens more as it cools).
3. Prepare the Pear
Slice the pear thinly.
Optional: lightly pan-sear slices for 1–2 minutes for extra caramelization.
4. Assemble the Towers
Start with a beet slice as the base.
Add a layer of blue cheese.
Place a slice of pear.
Repeat layers (2–3 layers total).
Finish with a beet slice on top.
5. Plate & Garnish
Drizzle generously with balsamic glaze.
Add arugula or microgreens on the side or top.
Sprinkle nuts and fresh thyme.
