Notes & Tips:
For a vegan version, skip burrata and use avocado or vegan cashew cheese.
Golden beets add color contrast and mild flavor.
Burrata should be added right before serving so it stays creamy and fresh.
You can roast the veggies ahead and assemble when ready to eat.
Frequently Asked Questions
Q: Can I use pre-cooked beets?
Yes. Just skip roasting them and warm them slightly or serve cold. Roast the carrots separately.
Q: Can I use goat cheese instead of burrata?
Absolutely. Goat cheese or feta makes a great substitute with a tangier flavor.
Q: Can I add grains?
Yes! Farro, quinoa, or couscous make it more filling and great for meal prep.
