Roasted Sweet Potato Rounds with Honey & Cranberries

Ingredients

2 large sweet potatoes, sliced into 1 cm rounds

2 tbsp olive oil

1½ tbsp honey

½ tsp cinnamon

Salt & black pepper to taste

⅓ cup dried cranberries

¼ cup crumbled feta or goat cheese (optional)

2 tbsp chopped pecans or walnuts

Fresh thyme for garnish

 

Directions

 

Preheat oven to 220°C (425°F). Line a baking sheet with parchment.

 

Toss sweet potato rounds with olive oil, salt, pepper, and cinnamon.

 

Arrange on the baking sheet in a single layer.

 

Roast 20–25 minutes, flipping halfway until edges are golden.

 

Drizzle honey over the hot sweet potato rounds.

 

Top with dried cranberries, nuts, and cheese if using.

 

Garnish with fresh thyme and serve warm.
