1 large head of broccoli, cut into florets

1 medium leek, sliced (white and light green parts)

200g halloumi, sliced into 1 cm thick pieces

2 tbsp olive oil

6–8 fresh sage leaves

½ tsp chili flakes (optional)

Zest of ½ lemon

Instructions

Preheat oven to 200°C (390°F).

Prep the veg: On a large baking tray, toss broccoli and leek slices with 1.5 tbsp olive oil, salt, and pepper. Spread out evenly.

Roast: Place tray in oven and roast for 20–25 minutes until broccoli edges are crisp and leeks are golden.

Fry the halloumi: While veg is roasting, heat remaining 0.5 tbsp olive oil and the butter (if using) in a nonstick pan over medium-high heat. Add sage leaves and fry for 30 seconds until crisp. Remove and set aside.

In the same pan, fry halloumi slices 2–3 mins per side until golden.

Assemble: Remove roasted veg from oven, top with halloumi, crispy sage, lemon zest, and chili flakes. Sprinkle with toasted nuts if desired.

Serve warm – as a main with couscous, quinoa, or flatbread, or as a side with grilled protein.
